Description

A visually stunning traditional dish of the Dai people in southern Yunnan. A whole pineapple is hollowed out. Its flesh is mixed with soaked glutinous rice, sugar, raisins, and goji berries, stuffed back into the pineapple shell, and steamed whole. A sweet-sour, highly aromatic fruit sticky rice.

Ingredients

  • Whole pineapple
  • Glutinous rice
  • Rock sugar
  • Raisins
  • Goji berries
  • Lard(or butter)

Instructions

  2. Soak glutinous rice (adding a bit of purple rice is authentic) overnight.
  3. Cut off the top 1/
  4. of a fresh pineapple to use as a lid.
  5. Hollow out the flesh carefully to make a bowl.
  6. Discard the hard core and dice the soft flesh.
  7. Mix the drained sticky rice, diced pineapple, rock sugar, raisins, goji berries, and a dash of lard.
  8. Stuff the mixture into the pineapple shell up to 80% full (rice expands).
  9. Cover with the lid and steam for 40-
  10. mins until the sticky rice is tender.
