Description

'Kacha' (Raw) + 'Choila' (Spicy meat salad). The ultimate 'raw meat' dish eaten by Kathmandu Valley Newars only on special days like festivals (when fresh meat is obtained). Unlike regular Choila roasted over open flame, ultra-fresh lean buffalo (Buff) is finely minced and tossed raw with mustard oil, massive spices, and garlic. The Nepali version of ultra-spicy 'Yukhoe (or Steak Tartare)'.

Instructions

  2. [Mince Meat]: Meticulously mince ultra-fresh lean buffalo meat (no fat/sinew) with a cleaver until just before it becomes a paste.
  3. [Tempering]: Heat mustard oil in a small pan until smoking, burn fenugreek pitch-black, remove from heat, cool slightly.
  4. [Toss]: Put raw minced meat, grated garlic, grated ginger, salt, chili powder, and cumin in a bowl. Pour the aromatic mustard oil over it and knead well by hand until sticky.
