Description
A traditional fried sweet specially made by Kathmandu Valley Newars as festival or wedding gifts (souvenirs). 'Khuwa' is rich reduced milk, 'Mari' means sweet (bread). Wheat dough wrapped half-moon like Gyoza around a sweet filling of Khuwa, nuts, and sugar, deep-fried crispy. Almost identical to Indian festival sweet 'Gujiya'.

- [Dough]: Knead flour, water, and melted ghee into a smooth pie-crust-like dough.
- [Wrap & Fry]: Roll dough thin/round, place filling in center, fold in half, seal edges pressing with a fork or twisting into beautiful waves. Deep-fry in medium oil until fine bubbles form on the surface and it's completely golden and crispy.

Looks exactly like fried Gyoza, but the inside is rich like cake. In Newari weddings, there's a highly lavish, beautiful ritual where the groom's side gifts the bride's side a giant bamboo basket heaped with various shaped sweets including Khuwa Mari (like Lakhamari).

Hold by hand and bite. The contrast between the 'crispy, crumbly' ghee-kneaded pie-like exterior and the overflowing premium rich, sweet 'milk filling (Khuwa)' inside demands infinite black tea (Chiya).
