Buff Sadeko (Spicy Buffalo Salad)

水牛肉の旨味とスパイスの暴力!最強の肉サラダ

Spice 5 Cooking difficulty: MediumGluten-free, Diet (Lean meat with low fat)
Salad Side Dish Snack Meat Dish

Description

'Buff' is buffalo meat, 'Sadeko' means tossed salad. Buffalo meat tailored in the Sadeko style (ultra-spicy raw veg and spice toss) loved by Nepali youth. Unlike 'Choila' using open-flame roasted meat, Sadeko uses 'tenderly boiled (or grilled) meat', featuring the fresh salad-like taste of raw onions, tomatoes, and mustard oil.

Trivia

Buffalo is lean and tough, so long-braising with spices or cutting fine and tossing with strong spices/oil like this erases the dryness, magically transforming it into a premium snack. A masterpiece where mustard oil's sharp aroma neutralizes buffalo's wildness.

Eating tips & etiquette

Over time, veg moisture leaks, so eat heartily immediately after tossing alongside Chiura (beaten rice) as a snack (Anju) for cold beer or strong liquor.
