Instructions
- Wash okra well, wipe moisture completely (*to prevent sliminess), trim stems, slice vertically into
- thin strips, and lightly remove seeds.
- Put okra in a bowl, add turmeric, chili powder, garam masala, salt, and batter-forming Besan and a little rice flour; coat evenly.
- Drop loosely into hot oil, fry briefly until okra moisture evaporates and becomes entirely crispy and fragrant, then drain oil.
