Instructions
- Grind lean mutton repeatedly in a food processor to an ultimate smooth paste mince.
- Knead in meat-tenderizing enzyme-rich 'raw green papaya paste', roasted chickpea flour, dozens of ultra-finely ground spices, Ghee, rose water; rest overnight to mature.
- Scoop the very soft meat mixture with a spoon, drop gently onto a Tawa (griddle) heated with generous Ghee, shape, and bake gently on both sides without burning.
