Instructions

  1. Parboil spinach briefly in hot water, shock in cold water, puree smoothly in a mixer keeping its vibrant color.
  2. Heat butter (or Ghee) in a pot, fry cumin seeds, minced garlic, onions until translucent; add a little wheat flour (for thickening), fry until non-powdery.
  3. Pour spinach paste and veg bouillon (or water), adjust taste with salt and black pepper. Turn off heat just before boiling, drizzle a little heavy cream to finish.
