- Fry small round dough made of semolina/wheat flour in hot oil to make hollow crispy 'Puri' (commercial OK).
- Blend mint, cilantro, green chilies, tamarind, black salt, water, ice in a mixer to make cold spicy 'Pani (spice water)'.
- Crack a hole in the top of Puri with fingers, stuff mashed potatoes or chickpeas, pour spice water generously to serve.
