  1. Roll dough of wheat flour, salt, water large and thin, fry in hot oil to make a giant crispy hollow ball (Kachori) puffed like a balloon.
  2. Crack a large hole in the top of Kachori with fingers, stuff boiled mung beans, potatoes, chickpeas inside.
  3. Pour plain yogurt, tamarind, mint, cumin, coriander, chili powder, Chaat Masala to the brim, scatter thin fried noodles (Sev) and cilantro to finish.
