Ingredients

  • Indica rice
  • Lemon juice
  • Peanuts
  • Mustard seeds
  • Turmeric
  • Curry leaves
  • Red chilies
  • Green chilies
  • Urad Dal
  • Asafoetida(Hing)
  • Salt
  • Oil

Instructions

  1. Prepare cooked Indica rice (or leftover rice) in a flaky state.
  2. Heat oil in a pan, fragrantly fry mustard seeds, Urad Dal (a little lentils), peanuts, cashews, dried red chilies, green chilies, curry leaves. Add Asafoetida (Hing) and turmeric to make golden spice oil.
  3. Turn off heat, add generous fresh lemon juice and salt, mix. Toss in rice, mix gently so grains don't crush until everything dyes beautiful yellow to finish.
