Ingredients

  • Beetroot
  • Coconut fine
  • Onion
  • Mustard seeds
  • Urad Dal
  • Red chilies
  • Cumin
  • Curry leaves
  • Salt
  • Coconut oil

Instructions

  1. Peel beets, mince very finely (or grate coarsely).
  2. Heat coconut oil in a pan, temper mustard seeds, Urad Dal, red chilies, curry leaves for aroma.
  3. Add chopped beets, onions, cumin, salt, stir-fry briefly, cover and steam-bake for a few mins using beets' own moisture. Once cooked, mix in massive freshly grated coconut fine to finish.
