Instructions
- Marinate chicken with salt and turmeric. Dry-roast coconut, red chilies, coriander, cumin, fennel, cloves, cinnamon, nutmeg, poppy seeds, star anise until deep brown, and paste.
- Heat oil, fry onions and garlic-ginger, add chicken and sear.
- Add roasted spice paste, a little tamarind juice, water; simmer slowly until meat softens and oil completely separates to finish.
