Instructions

  1. Cube mutton. Heat oil, fry cumin, cinnamon, cloves, and fry onions, garlic, ginger until caramelized.
  2. Add mutton to sear, add tomatoes, red chilies, turmeric, coriander, salt.
  3. Add water, vinegar, sugar; simmer slowly until meat is crumbly and sauce turns rich red-brown. Plate, top generously with crispy ultra-thin french fries (Sali) right before eating to finish.
