- Like Rasgulla, curdle milk with lemon juice to make cottage cheese (Chhena), knead smoothly into small flat discs.
- Boil cheese in sugar water for

- Simmer milk in another pot to half volume, add sugar, saffron, cardamom powder, chopped pistachios/almonds (sauce called Rabri). Soak boiled cheese in this milk sauce, chill ice-cold in fridge to finish.
