Instructions

  1. Climb palm trees at night, cut flower bud tips, hang pots, collect dripping sap (Neera) overnight.
  2. Once the sun rises and temp increases, natural fermentation starts turning it into alcohol (Toddy); hurry to collect before dawn.
  3. Pour newly collected cold, sweet Neera into a glass, drinking as is without any processing or flavoring.
