Recipe
Ingredients
- Oyster mushrooms or Maitake
- Flour
- Cornstarch
- Egg
- Cumin/Chili/Five-spice
Instructions
- [Authentic Recipe]
- Tear thick Oyster or Maitake mushrooms into large chunks by hand, wash briefly, and pat bone-dry.
- Mix flour, cornstarch, egg, water, a pinch of salt, and Five-Spice into a thick, heavy batter.
- Dredge the mushrooms heavily in the batter and fry in 170°C (340°F) oil.
- The secret is the 'Double Fry': remove them, crank the oil to 190°C (375°F), and drop them back in to completely obliterate the moisture in the batter, resulting in an earth-shattering crunch.
