Instructions

  2. Take sheets of pressed dried tofu skin (Tofu Pi) and julienne them as finely as noodles (2-3mm wide).
  3. Flash-blanch in boiling water with a pinch of baking soda for just
  4. seconds to remove the raw bean smell and soften the texture. Immediately shock in ice water and squeeze completely dry.
  5. Julienne fresh cucumbers and roughly chop cilantro.
  6. In a large bowl, violently toss the tofu and veg with black vinegar, soy sauce, sesame oil, homemade chili oil, massive amounts of grated garlic, and a pinch of sugar, aerating the mixture.
