- Samosas, 150g Chole (chickpea curry),
- tbsp tamarind chutney,
- tbsp mint chutney,
- tbsp minced raw onion, 30g Sev (ultra-thin fried noodles),
- tsp Chaat Masala.
- Golden Samosas wrapping spicy mashed potatoes scented with cumin and coriander are continuously deep-fried crispy in boiling oil inside a giant cauldron (Kadai).
- Upon order, take a freshly fried Samosa still popping with oil onto a plate, and heedless of the heat, crush it perfectly in half 'Snap!' with the thumb pad.
- Pour piping hot Chole (black chickpea curry) simmering gooey in an adjacent pot to the brim over the crumbled Samosa cross-section with a ladle.
- Furthermore, swirl sweet-sour tamarind chutney and piercingly fresh green mint chutney like art, finally scattering crispy raw onions, massive Sev, and Chaat Masala. A royal stall junk food where the crispy crust absorbs curry and sauces, transforming into an exquisite 'moist yet crunchy' texture.

Trivia
[Hardcore] Beginners think Samosas are eaten as is. The real stall pleasure is 'Samosa Chaat' using it as a base. It truly completes when warm curry and cold chutneys meet.
