- Prepare giant pie 'Kachori' stuffing massive black bean paste and spices like cumin, fennel, coriander seeds inside wheat dough, deep-frying slowly in low-temp oil finishing the outside rock-hard crispy.
- Upon customer's order, place fresh-fried hot Kachori on a plate, boldly break open the center with a loud 'Snap!' using the thumb pad.
- Stuff fluffily boiled chickpeas and cubed potatoes into that gaping hole, further pouring massive whisked cold sweet rich yogurt (Dahi).
- To finish, drizzle tamarind/mint chutneys in a grid, beautifully decorating like a cake with bright red pomegranate seeds, Sev (ultra-thin fried noodles), Chaat Masala, and chili powder.
