- Pop cumin seeds, add minced onions, tomatoes, peppers, boiled potatoes/peas, frying vigorously until gooey with special bright red 'Pav Bhaji Masala' and garlic paste.
- Toss a mountain of pre-cooked firm Basmati rice there.
- Vendor deftly manipulates iron spatulas in both hands, rhythmically hitting the griddle 'Clang-Clang-Clang!' stirring the red spice paste and rice at high speed.
