- Tamarind chutney
- Mint chutney

Instructions
- [For
- Servings/Ingredients] 100g Urad Dal flour, cumin/ginger to taste, frying oil, lukewarm water (for soaking), 300g sweet yogurt,
- tbsp each tamarind/mint chutneys, roasted cumin/chili powder to taste.
- Prepare golden balls (Vada) frying Urad Dal paste kneaded with cumin/ginger fluffily in oil.
- Plunge fresh-fried Vada directly into a bowl of lukewarm water for tens of mins, puffing to the limit absorbing moisture like a sponge, simultaneously completely removing excess oil.
- Gently sandwich water-absorbed Vada in palms squeezing moisture lightly, placing plumply in a deep bowl.
- Splash massive rich creamy yogurt—ice-chilled, faintly sweetened with sugar—until Vada is completely hidden. Swirl sweet-sour tamarind/refreshing mint chutneys like art over the pure white yogurt sea, scattering Masala. The cold Vada crumbling without resistance when spooned melts spice/yogurt sweet-sourness in the mouth—a supreme dessert snack.

Trivia
[Hardcore] Also called 'Dahi Bhalla'. A cooking method surprising to Japanese: intentionally soaking fried foods in water making them soggy. However, this process erases greasiness, sublimating into a 'drinkable snack' brilliantly integrating with yogurt.
