Instructions

  3. tbsp mustard powder,
  4. tsp turmeric,
  5. tsp chili powder,
  6. tbsp black salt, 1L purified water (for Kanji water).
  7. Dissolve finely ground mustard seeds, turmeric, chili powder, intense sulfur-scented black salt in massive purified water, put in pottery pot, naturally ferment slowly under sunlight for days.
  8. Fermentation progresses via yeast/mustard power, completing yellow fermented water (Kanji) with pungent nose-piercing odor and intense acidity.
  9. Deep-fry bite-sized rolled mung bean paste balls (Vada) crispy in oil, tossing them massively into this cold Kanji pot.
  10. Upon order, put a few water-absorbed fluffy Vadas in unglazed cups, pouring cold sour Kanji water brimmingly to serve. Chug the yellow fermented water smelling of mustard stimulation, finally popping the acid-absorbed bean ball into the mouth to adjust gastrointestinal condition—detox drink.
