- tbsp mustard powder,
- tsp turmeric,
- tsp chili powder,
- tbsp black salt, 1L purified water (for Kanji water).
- Dissolve finely ground mustard seeds, turmeric, chili powder, intense sulfur-scented black salt in massive purified water, put in pottery pot, naturally ferment slowly under sunlight for days.
- Fermentation progresses via yeast/mustard power, completing yellow fermented water (Kanji) with pungent nose-piercing odor and intense acidity.
- Deep-fry bite-sized rolled mung bean paste balls (Vada) crispy in oil, tossing them massively into this cold Kanji pot.
- Upon order, put a few water-absorbed fluffy Vadas in unglazed cups, pouring cold sour Kanji water brimmingly to serve. Chug the yellow fermented water smelling of mustard stimulation, finally popping the acid-absorbed bean ball into the mouth to adjust gastrointestinal condition—detox drink.
