- tbsp soy sauce,
- tbsp chili sauce,
- tbsp ketchup,
- tsp cornstarch (for thickening).
- Cube pure white bouncy Paneer large, dust with cornstarch, shallow-fry briefly in oil until surfaces are pale golden, keeping outside crispy, inside fluffy.
- Apply oil to a well-used stall wok, toss minced garlic, ginger, diagonally-cut green chilies, raising a choking spicy aroma.
- Add large-chopped onions and peppers, tossing on high heat leaving crispiness.
- Return fried Paneer, swirl bright red sauce mixing soy sauce, intense chili sauce, a little ketchup against the pot sides to sear 'Sizzzzzle!'. Finally, add glossy thickness to the sauce with cornstarch slurry, coating the Paneer heavily. The ultimate rice (or noodle) stealer where cheese milkiness and brain-piercing chili heat clash in the mouth.
