- tsp garlic-ginger paste,
- tsp cumin powder, 1/
- tsp turmeric, 600ml chicken broth,
- tsp soy sauce, salt/black pepper to taste, cilantro, 1/
- lemon.
- On a street blowing cold winter winds, white steam billows from the stall's cauldron. Heat oil in the pot, fry garlic-ginger paste and onions, building a spicy foundation with turmeric and cumin.
- Add finely cut chicken and massive julienned veg (cabbage/carrots) and fry, pouring hot broth taken from chicken bones (or veg) to the brim.
- As the soup bubbles and veg sweetness and chicken umami dissolve, season with soy sauce and black pepper, dropping in separately boiled medium-thick noodles 'thud'.
- Plate in a bowl, top with a heap of fresh cilantro, optionally dripping super-spicy chili paste and freshly squeezed lemon juice. A Himalayan foothill soul food where the spicy hot soup and smooth noodles warm the chilled-to-the-core body warmly from the stomach.
