  4. mashed potato,
  5. tbsp minced onion,
  6. tsp each coriander seeds/cumin/ajwain,
  7. green chili, 50g butter, 150g Chole (chickpea curry),
  8. tbsp tamarind chutney.
  9. Generously wrap spicy mashed potatoes kneaded with cumin, ajwain, coarsely crushed coriander seeds, green chilies, minced onions in the center of yogurt-fermented dough.
  10. Roll thin and round with a pin, apply water to surface and press cilantro leaves onto it.
  11. Slap 'Smack!' and paste the dough onto the inner wall of a Tandoor oven heated to 400°C, baking fragrantly for mins while cloaking it in charcoal smoke until the surface becomes golden and crispy like pie.
  12. Place the piping hot Kulcha peeled from the oven with a long iron rod on a board; the vendor crushes it inward 'Crunch!' with both hands to break the crispy layers. Place a giant butter chunk like a parent's sworn enemy on top, serving to the customer while watching the golden butter waterfall seep into the bread crevices via heat.
