- tbsp tamarind paste, cumin powder/ajwain/salt to taste, 100g Besan (chickpea flour),
- tbsp rice flour, turmeric to taste, frying oil,
- tbsp minced raw onion, 1/

- Make a vertical slit in a giant meaty green chili ~15cm long, carefully removing inner seeds/pith to soften heat.
- Thinly smear a special spice paste mixing intense-sour tamarind paste, roasted cumin powder, ajwain, salt into the empty chili belly with a finger.
- Dunk the whole chili completely into a yellow gooey batter made by adding a little rice flour (for crispiness), turmeric, water to chickpea flour (Besan).
- Quietly drop into heated cauldron oil, deep-frying fragrantly until batter puffs into crispy golden color. Slit the freshly fried hot Bajji down the middle, stuff generously with crispy minced raw onions, squeeze lemon to serve. Crispy batter, chili's grassy flavor and slight heat, tamarind acidity, and onion texture play a quartet in the mouth—the ultimate Chai companion.
