- tbsp mustard oil,
- tsp each minced garlic/ginger/green chili, ajwain/lemon juice to taste,
- giant eggplant,
- tomatoes,
- tbsp Ghee (clarified butter).
- Mix chopped garlic, ginger, green chilies, ajwain, lemon juice, and pungent raw mustard oil into roasted chickpea flour (Sattu), making spicy, slightly sour filling.
- Wrap this filling roundly in whole wheat (Atta) dough, making spheres (Litti) slightly larger than ping-pong balls.
- Toss Litti directly into glowing charcoal (or dried cow dung fire) ash on stall street, rolling to roast whole rustically until surface chars rock-hard.
- Peel eggplants and tomatoes roasted whole in same charcoal until skin is pitch-black, mash gooey by hand with raw onions, green chilies, mustard oil to make 'Chokha (mash paste)'.
- Hit baked piping hot Litti with cloth brushing off ash, break 'Snap' from middle by hand, plunge heavily into massive Ghee pot absorbing butter to the limit. Eat Ghee-dripping Litti coated in smoky veg Chokha—an unadorned powerful energy food.
