- Heat giant >1m flat black griddle (Dosa Tawa), drop white fermented rice/bean batter in center with ladle.
- Stall vendor uses ladle bottom, spreading batter into ultra-thin giant circle outward from center 'swirl-swirl-swirl!' with splendid handwork.
- When batter starts drying crispy, place butter chunk, spicy mashed potatoes (Masala), chopped onions/tomatoes, red chili paste in center, frying messily directly on batter utilizing griddle heat.
- Grate massive processed cheese like snow mountain over that super-spicy potato paste. When cheese melts gooey from heat and batter back bakes beautiful golden, peel instantly from edge with special flat spatula, folding cylindrical (or triangular) wrapping inner cheese/potato.
