  7. Put equal parts sugar/water in a pot, add saffron/cardamom powder boiling down gooey, prepping piping hot 'special syrup'.
  8. Mix wheat flour, semolina (for crispiness), milk powder (for rich depth, originally Khoya from boiled milk), refreshing fennel seeds, gradually adding milk making smooth pancake-like batter.
  9. Heat massive Ghee (clarified butter) in a shallow wide stall iron pot (Kadai).
  10. Scoop batter with ladle, pour 'sizzle' drawing a circle in the hot Ghee pool center. Flip when batter edges turn crispy lace-like and center puffs golden.
  11. Dive the fresh-fried oil-dripping hot pancake (Malpua) directly into the adjacent kept-warm super-sweet syrup pot. Let it absorb syrup to the core for mins, plate, scatter crushed pistachios to finish. Crispy outside, overflowing juicily with sweet juice inside—a festival dessert breaking calorie limits.
