- cubed boiled potato, 150g sweet yogurt,
- tbsp tamarind chutney,
- tbsp mint chutney,
- tbsp pomegranate seeds, 30g Sev,
- tsp each Chaat Masala/chili powder.
- Julienne raw extra-large potatoes long/thin, soak in water to completely remove starch.
- Sandwich these julienned potatoes between
- metal sieves (large/small), fixing them into a nest-like 'basket (Tokri)' shape.
- Plunge directly into a cauldron of boiling oil, frying fragrantly until potatoes turn rock-hard golden.
- Drain oil/remove sieves, completing a splendid 'edible golden basket'. Lay fluffy chickpeas/boiled potatoes inside, pouring ice-cold rich sweet yogurt to the brim.
- To finish, drizzle black tamarind/green mint sauces in a grid, scattering bright red pomegranate/Sev. Breaking the crispy basket with a spoon while scooping the sweet-sour chaos inside—Delhi's masterpiece perfect in looks and taste.
