  6. Put massive sugar, water, cardamom, saffron in pot, making stringy rich hot syrup kept warm.
  7. Pack gooey batter—fermenting wheat flour/yogurt overnight yielding unique acidity—generously into special piping cloth (Jalebi Kapra) with a small center hole.
  8. Heat Ghee (or oil) to high temp in stall shallow wide iron pot (Kadai).
  9. Vendor grips cloth, turning wrists 'swirl-swirl' rhythmically, swiftly extruding batter 'spiral-like' into hot oil sea. Batter puffs crispy instantly forming splendid geometric patterns.
  10. Pull piping hot golden Jalebis from oil with tongs, plunging instantly without a moment's gap into adjacent syrup pot. Crispy batter absorbs syrup to the core 'juicily', completing orange super-sweet snack shooting hot nectar from inside.
