- On a Mumbai night, throw a butter block on a giant griddle (Tawa), popping cumin seeds.
- Fry minced onions, garlic-ginger paste, green chilies on high heat almost burning, add tomatoes/spices (Garam Masala, chili powder) making gooey base.
- Toss coarse mutton Keema (mince) there. Vendor uses two iron spatulas hitting griddle rhythmically 'Clang-Clang-Clang!', frying vigorously until meat's red color vanishes perfectly integrating with spices, meat fat oozing juicily.
- At griddle edge, bake fluffy bread (Pav) fragrantly golden in butter. Squeeze massive cilantro/lemon over Keema condensed with rich meat umami/spice aroma, scooping with butter-soaked bread along with meat juices eating wildly—a meat dish with overwhelming punch.
