  3. large red onions, 50g Besan (chickpea flour),
  4. tbsp rice flour,
  5. minced green chili,

  7. tsp each ajwain/turmeric/salt, frying oil, green chutney.
  8. Put thinly sliced red onions, salt, green chilies, turmeric, ajwain, and 'coarsely crushed coriander seeds' for texture accent in a bowl.
  9. Knead onions strongly by hand, binding dough solely with moisture from onions (*Secret to crunchiness is adding absolutely zero water, just dusting a little Besan/rice flour).
  10. Toss batter into boiling cauldron oil unrolled in irregular shapes 'spreading fingers to scatter'.
  11. Fry instantly on high, remove when onion edges char deep brown and crunchy. Drain oil on newspaper, serve piping hot with green chutney. A blissful snack matching Chai perfectly, with onion sweetness and popping coriander seed savoriness.

Trivia

[Hardcore] 'Kanda' means onion in Marathi. While North Indian 'Pakora' enjoys fluffy batter, Mumbai's 'Bhaji' makes batter ultra-thin, absolutely ruling to enjoy onions' 'crunchy, crispy texture'. When monsoon (rainy season) arrives, the savory smell of frying this Kanda Bhaji fills stalls across Mumbai.
