  9. Paste yellow Moong Dal (skinless) softened soaking overnight in water with ginger, green chilies, a little water in mixer, making smooth greenish-yellow paste batter.
  10. Heat stall's large griddle (Tawa), drop ladle of batter in center, spread thin like Dosa drawing circles with ladle back.
  11. Brush butter (or oil) on surface; when batter bakes fragrantly and edges crisp, heap pure white grated Paneer (Indian cheese), minced raw onions, cilantro, a little Chaat Masala in center.
  12. Scatter Paneer across batter with spatula, fold in three (or roll) 'pat-pat' from batter edge.
  13. Cut bite-sized on griddle, serve alongside vivid green mint chutney and sweet-sour tamarind chutney. Bean savoriness, cheese milkiness, veg crispiness harmonize perfectly—supreme zero-guilt snack.
