- tbsp butter,
- tbsp green chutney,
- tbsp ketchup.
- Crack eggs into large mug, add minced onions, green chilies, cilantro, chili powder, salt, whisking violently with fork 'shaka-shaka'.
- Melt butter on stall flat griddle (Tawa), pour beaten eggs instantly making rectangular thin omelette.
- Before egg fully sets, place
- sliced breads on top, pressing to let bread absorb egg liquid.
- Using spatula, flip completely with bread, folding protruding egg edges over bread to wrap it.
- Smear green chutney/ketchup between breads, fold
- breads together 'pat' into sandwich.
- Drop extra butter on griddle, press-bake fragrantly until both sides are crispy golden. Cut diagonally, serve wrapped in newspaper. Enjoy crispy bread and spicy egg umami walking alongside hot Chai.
