- Coarsely mash fluffily boiled potatoes.
- Heat a little oil in pan, pop mustard seeds, fry Urad Dal, green chilies, curry leaves transferring aroma.
- Splash this spice oil 'sizzle' over mashed potatoes dyed yellow with turmeric, knead well, roll into spheres slightly larger than ping-pong balls.
- Dunk potato balls heavily into yellow gooey batter mixing chickpea flour (Besan) and a little rice flour (for crispiness).
- Quietly drop into stall's boiling cauldron oil, fry fragrantly until surfaces turn crispy golden. Crispy outside, hot potatoes scented with curry leaves/spices emit steam inside. Supreme afternoon snack eaten with coconut chutney alongside South Indian sweet filter coffee.
