- Mix flour, water, salt, and precise ratios of leavening agents (baking soda/alum and baking powder) to create a very soft dough. Let it rest in the fridge overnight.
- The next morning, stretch the dough into a rectangle and cut into 3cm-wide strips.
- Stack two strips on top of each other, and press a wet chopstick firmly down the center to bind them.
- Grab the ends, stretch it long, and carefully drop into 200°C (390°F) hot oil.
- Roll it constantly with chopsticks; the chemical reaction causes it to instantly balloon into a massive, hollow, crispy golden stick.
