- tsp chili powder, frying oil, tamarind chutney.
- Fry massive coarsely minced onions in oil with crushed coriander seeds, fennel, chili powder, a little chickpea flour (Besan/to absorb moisture), making sweet-spicy brown onion filling.
- Generously wrap this onion filling in crispy wheat dough kneaded with oil/salt, shaping into palm-sized flat discs.
- Quietly submerge in 'lukewarm low-temp oil' of stall's giant iron pot (Kadai), cooking slowly over time so dough doesn't tear.
- As oil temp rises, Kachori puffs plumply; remove when surface becomes rock-hard crispy deep golden.
- Plate piping hot giant Kachori on paper plate, poke hole from above with thumb making loud 'Snap!', pouring sweet-sour tamarind/green mint chutneys inside to serve. Crispy thick crust and gooey spicy onion sweetness inside play perfect harmony.
