- Put high-fat rich yogurt (Dahi) in large bowl, add sugar, cardamom powder, rose water.
- Sandwich traditional Indian wooden masher (Madhani) in both hands, manually stirring powerfully making 'shaka-shaka shuko-shuko' sounds until yogurt froths smoothly (*Secret to ultra-richness is absolutely adding no ice/water).
- Pour finished rich Lassi brimmingly into 'unglazed pot (Matka)' slightly larger than Chai's.
- Here is Matka's magic. Unglazed micro-pores let yogurt's excess moisture escape outside, condensing Lassi into even gooier 'semi-solid'.
