- Heavily coat bite-sized chicken in batter of cornstarch/flour dissolved in water, double-fry in stall cauldron oil until surfaces are crispy, making 'crispy fried chicken'.
- Heat another well-used wok (Kadai) until smoking, apply oil, toss massive minced garlic, ginger, green chilies tossing on high heat almost burning them.
- Add minced onions, frying leaving crispiness, then swirl special sauce mixing soy sauce, ketchup, chili sauce, vinegar against pot sides 'Sizzzzzle!'.
- As sauce bubbles and junk burnt garlic/soy smell rises, dive the crispy fried chicken in.
