- Divide cauliflower (Gobi) into bite-sized florets, parboil briefly in hot water draining firmly.
- Dissolve rice flour (for crispiness), cornstarch, intensely colored Kashmiri chili, yogurt, garlic-ginger paste with a little water in a bowl making blood-red gooey batter.
- Dunk cauliflower heavily into this red batter, drop sequentially into boiling stall cauldron oil, deep-frying fragrantly until surfaces become rock-hard crispy states.
- Heat a little oil in another pan, pop mustard seeds, fry massive fresh curry leaves and vertically-split raw green chilies almost burning to draw intense aroma (tempering).
