- In a bowl, loosely mix sour fermented batter, minced onions, green chilies, aroma-extracted mustard seeds, cumin, torn curry leaves.
- Using a spoon, deftly pour batter up to 80% into the piping hot cavities.
- When bottoms bake golden and edges crisp, flip instantly 'twirl' like Takoyaki using a thin bamboo skewer or special metal rod.
