- curry leaves, salt pinch, Batter (100g Besan flour, water, turmeric pinch), Frying oil,
- tbsp garlic chutney.
- Heat little oil in pan, pop mustard seeds, fry garlic-ginger, green chilies, curry leaves without burning transferring aroma to oil.
- Add this spice oil, turmeric, salt to boiled coarsely mashed potatoes (Batata), knead evenly yellow by hand, roll into spheres slightly larger than ping-pong balls.
- Dunk potato balls heavily into 'yellow gooey batter' dissolving Besan (chickpea flour), turmeric, salt in water.
- Quietly drop into stall's boiling cauldron oil, fry fragrantly while pouring oil with ladle until surface batter puffs crispy golden.
- Drain oil on newspaper, hand over alongside salted 'fried green chilies' and bright red 'dry garlic chutney'. Breaking crispy batter releases steam from hot fluffy potatoes scented with curry leaves/garlic—Mumbai's absolute snack.
