- tbsp oil (or butter).
- As prep, heavily soak sliced raw onions in sour-spicy vinegar pickling green chilies (green chili vinegar).
- Apply little oil (or butter) on stall griddle (Tawa), briefly warm whole wheat flatbread (Roti) both sides.
- Place 'thud' a long cylindrical mashed potato croquette (Aloo Tikki) flavored with cumin/turmeric—shallow-fried crispy elsewhere—in warmed Roti center.
- Generously top potato with sour 'vinegar onions'.
- Here's the biggest flavor keystone. Massively sprinkle special 'Frankie Masala' effective with Amchoor (dried mango powder) acidity and black salt flavor from above like a parent's sworn enemy.
