- Wipe dirt off large mushrooms, cut in half. Dunk heavily into batter of cornstarch/flour/salt/pepper dissolved in water, fry in high-temp oil until surface crisps (*traps mushroom moisture inside, yielding juicy umami when chewed).
- Heat stall wok until smoking, apply oil, toss minced garlic, ginger, green chilies raising intense aroma.
- Add large-chopped onions/peppers, toss 'clang-clang' on high heat for seconds leaving crispiness.
- Swirl bright red special sauce mixing dark soy sauce, chili sauce, ketchup against pot sides, thickening glossy gooey with cornstarch slurry.
- Return fresh-fried mushrooms to pot, toss vigorously completely coating crispy batter in rich umami-spicy sauce. Scatter green onions to finish. Meaty mushroom texture and garlic-soy junk punch make you completely forget it's vegetarian.
