- tbsp milk, massive Ghee (or oil), Syrup (200g sugar, 200ml water,
- cardamom pods, few drops rose water, saffron pinch).
- Put water and equal (or more) sugar, crushed cardamom, saffron in pot, making gooey super-sweet syrup scented with rose water, keeping it piping hot.
- Mix wheat flour/baking soda into rich moisture-evaporated milk chunk 'Khoya' (stalls often substitute milk powder/Ghee), add little milk kneading into earlobe-soft dough, rolling into spheres slightly smaller than ping-pong balls without a single crack.
- Put massive Ghee (clarified butter) in stall's large iron pot (Kadai), keeping at very low temp.
- Quietly drop balls, frying slowly over 10+ mins while swirling oil with ladle so they don't burn, until surfaces turn 'dark brown near black'.
- Plunge fresh-fried hot balls directly into adjacent syrup pot. Balls absorb syrup to the core like sponges, puffing
- 5x original size to finish. Spooning crumbles it without resistance, hot nectar juicily overflowing from inside—the extreme of brain-trembling sweetness.
