- lemon, cilantro.
- Firmly drain moisture with sieve from pure white Sabudana (tapioca pearls) soaked in water since previous day returned fluffy to core enough to crush with fingers.
- Heat oil (or Ghee) in stall's shallow iron pot (or pan), pop cumin seeds, fry green chilies/curry leaves briefly raising aroma.
- Add cubed boiled potatoes frying until surfaces slightly color, instantly toss in drained Sabudana and texture star 'massive coarsely crushed roasted peanuts'.
- Sprinkle rock salt (Sendha Namak) for flavoring, use spatula to gently yet swiftly stir overall so tapioca pearls don't crush.
- Frying for mins, pure white tapioca pearls turn translucent like 'semi-transparent pearls' via heat. This is the completion signal of chewiness.
