- tbsp oil (or Ghee), coconut chutney/Sambar (bean soup) to taste.
- Prepare rice/bean batter slightly more fermented/sour than Dosa.
- Drop batter in center of stall's hot heated griddle (Tawa) with ladle, spreading into 'thick small circle' like pancakes without stretching ultra-thin like Dosa.
- While batter is still gooey raw, heavily sprinkle massive minced red onions, tomatoes, green chilies, cilantro across surface.
- Using ladle back, press topped veg 'squash-squash' burying into batter.
- Swirl massive oil (or Ghee) from edges; when bottom bakes golden, flip instantly 'heave-ho!' using spatula.
- Veg (tomatoes/onions) touching griddle directly char in oil 'sizzle' emitting sweet aroma; completes when batter cooks through becoming fluffy. Plate, serve alongside coconut chutney/Sambar.
