- tsp coconut oil, Chicken Salna (or veg stew) to taste.
- Add salt to finely ground pure white rice flour, gradually pouring boiling water, swiftly kneading with wooden spatula minding burns. When slightly cooled, apply coconut oil to hands kneading into earlobe-soft smooth dough.
- Stall vendor generously packs this rice flour dough into cylinder of brass (or wooden) traditional extruder 'Seva Nazhi'.
- Over banana leaves (or special small steamer plates), turning (or pushing) extruder handle powerfully 'squeeeeze' with both hands, extruding ultra-thin white noodles 'swirl-swirl' into bird's nest-like discs from fine bottom holes.
- Set this inside giant steamer billowing steam, steaming fluffy for mins.
- Plate pure white piping hot fresh-steamed Idiyappam, pouring brimmingly South Indian stall-unique 'spicy splashy chicken curry (Salna)' or coconut milk-based mild veg stew alongside handing over. Gentle textured steamed dish where ultra-thin rice noodles instantly absorb spicy soup, unravelling softly in mouth.

At stalls, a junk arranged menu 'Kothu Idiyappam (smashed stir-fry)'—smashing this by hand to pieces and violently frying on griddle with eggs/spices—is also hugely popular with youths.
