  7. tsp fruit salt (Eno/foaming agent), Tempering syrup (

  9. tsp mustard seeds,
  10. green chilies,
  11. curry leaves, 100ml water,
  12. tbsp sugar,
  13. tsp lemon juice).
  14. Dissolve Besan (chickpea flour), yogurt, lemon juice, turmeric, salt, sugar with little water in bowl making smooth gooey batter. Toss fruit salt (Indian baking soda-like foaming agent) here, frothing instantly, swiftly pour into oiled flat metal tray.
  15. Set tray inside stall's steam-billowing giant steamer, steam on high for ~
  16. mins into fluffy thick yellow batter like sponge cake.
  17. Leaving steamed batter on tray, cut into beautiful squares (diced) with knife.
  18. Make tempering (Tadka) in another small pan. Heat oil popping mustard seeds, transfer vertically-split green chilies/curry leaf aroma, add water/sugar/lemon juice boiling 'sweet-sour spicy hot syrup'.
